Chef Arnez Driver, Executive Chef, Health Spa Cuisine BKC, Mumbai, shares the recipe for this cinnamon flavored sweet potato. It’s a healthy, high-protein mix of crunchy charred sweet potatoes, with a hint of sweetness, a hint of spice; all infused with the aroma of cinnamon; a real treat for the senses.

Cinnamon flavored sweet potato gratin
Preparation time: 20 mins + 30 mins soak
Cooking time: 20 minutes + 20 minutes marinade
Serves: 4

5 large sweet potatoes
4 tablespoons of olive oil
2 tablespoons of honey
½ teaspoon ground cinnamon
1 tablespoon minced garlic
½ tbsp chilli flakes
5 sprigs of fresh thyme
1 teaspoon of salt
½ teaspoon black pepper powder
3 tablespoons chopped spring onion
2 tablespoons sour cream
Brine (salt water solution) for brining sweet potatoes

1. Wash and peel the sweet potatoes. Cut them into one inch pieces.
2. Brine the sweet potato in salted water for about 30 minutes.
3. Meanwhile, in a bowl, add olive oil, honey, cinnamon powder, minced garlic, chili flakes, fresh thyme, salt and pepper. Mix everything well to make the marinade.
4. After 30 minutes of soaking, drain the sweet potatoes and pat them dry on a kitchen towel. Then add them to the bowl with the marinade and let them marinate for 20 minutes.
5. Once the sweet potatoes are marinated, preheat your oven to 180°C.
6. Line a baking sheet with parchment paper and place the marinated sweet potatoes on it, spacing them out to form a single layer.
7. Bake the sweet potatoes for 20 minutes at 180°C or until golden brown and nicely charred.
8. Place cooked sweet potatoes in a serving platter and top with dollops of sour cream and sprinkle spring onions on top.
9. Enjoy it freshly cooked.
